Ramen is a Japanese dish consisting of noodle and soup, topped with char siu, menma, egg, green onion, laver, etc. It has developed uniquely after coming down to Japan, and has different taste and texture from those of Japanese wheat noodle and Chinese style noodle. There are a wide variety of ramen all around Japan, but we serve a kind of ramen with Tonkotsu (pork bone) soup, called “Iekei ramen” originating from Yokohama in Kanagawa Prefecture. Soup is a very important element of ramen, and we serve the soup, developed by repeated trial and error, which the chef prepares everyday by carefully judging every condition at each day.

This is a fried one containing meats and vegetables, wrapped up in thin dough prepared by mixing flour and water.
