Yakitori, one of Japanese foods, is skewered and char-broiled bite-sized pieces of chicken.
By taking advantage of the features of charcoal fire, i.e., low-water content and high tem- perature/power heat, chicken, even its inside, is cooked thoroughly in a short time with its surface finished crisply. We strictly keep using Japa- nese domestic chicken to cook yakitori, which is skewered and cooked by the chef all by hand.
